Báo Sài Gòn Giải Phóng đã có cuộc phỏng vấn với ông Nguyễn Thanh Trúc, Giám đốc nhà máy sữa Công ty sữa NutiFood về hệ thống quản lý chất lượng tại nhà máy hiện nay và định hướng thiết lập hệ thống chất lượng cho các nhà máy đang xây dựng của NutiFood.
Thưa ông, hiện nay nhà máy của NutiFood đang thực hiện những biện pháp nào nhằm đảm bảo chất lượng sản phẩm?
– Chúng tôi coi chất lượng là yếu tố quan trọng hàng đầu nên đã áp dụng rất nhiều biện pháp và quản lý chặt chẽ các biện pháp đó để đảm bảo chất lượng sản phẩm. Ngay từ khi đưa vào hoạt động, Nhà máy NutiFood Bình Dương đã đạt tiêu chuẩn GMP Food (Hệ thống Thực hành tốt sản xuất thực phẩm). Đồng thời, nhằm đảm bảo chất lượng sản phẩm, nhà máy đang duy trì việc tuân thủ áp dụng hệ thống quản lý chất lượng theo ISO 9001 và hệ thống an toàn thực phẩm theo ISO 22000, dưới sự giám sát quản lý và đảm bảo bởi Tổ chức ABS-QE Hoa Kỳ.
Trên cơ sở đó, nhà máy luôn duy trì và thực hiện nghiêm ngặt các quy trình, quy định kiểm tra chất lượng nguyên vật liệu đầu vào ngay từ nhà cung cấp đến khi nhập kho, bảo quản và suốt quá trình sử dụng chế biến tạo ra sản phẩm trong chuỗi hoạt động sản xuất tại nhà máy.
Trong quá trình sản xuất, bán thành phẩm và thành phẩm được kiểm tra tại từng công đoạn đảm bảo theo quy trình chuẩn của ISO 22000 với các điểm kiểm soát tới hạn có các kế hoạch HACCP tương ứng nhằm kiểm soát, ngăn chặn các mối nguy liên quan.
Thành phẩm theo từng ca, từng ngày sản xuất, từng lô hàng sản xuất đều được lưu mẫu, kiểm tra tại phòng thí nghiệm trước khi xuất bán ra thị trường.
Các thiết bị đo kiểm của nhà máy đều được hiệu chuẩn, kiểm định định kỳ phù hợp tiêu chuẩn về đo lường sản phẩm. Máy móc, thiết bị dây chuyền sản xuất luôn được chăm sóc, bảo trì định kỳ với sự hỗ trợ của các chuyên gia nhà cung cấp thiết bị Tetra Pak (Thụy Điển) và Combibloc (Đức).

Để quản lý tốt hệ thống và đảm bảo hiệu suất lao động cao, nhà máy đã có những biện pháp gì?
– Nhà máy rất chú trọng việc tuyển dụng và đào tạo đội ngũ nhân viên có chất lượng. Chúng tôi luôn có chương trình đào tạo cho công nhân viên khi mới vào làm việc và chương trình định kỳ cho tất cả phòng ban nhằm duy trì nhận thức về an toàn vệ sinh thực phẩm và nâng cao trách nhiệm cá nhân cùng hiệu suất làm việc.
Vấn đề đào tạo là chưa đủ, nhà máy còn áp dụng một số công cụ hỗ trợ nhằm duy trì hệ thống quản lý chất lượng ISO 9001, GMP, HACCP và ISO 22000, đó là chương trình 5S/Keizen. Phần mềm quản lý bảo trì tài sản CMMS EcoMaint nhằm giúp bộ phận kỹ thuật quản lý tốt và khai thác hiệu quả các thiết bị máy móc, công cụ, dụng cụ trong toàn nhà máy.
Để đánh giá đúng tình hình chất lượng, năng suất và an toàn thực phẩm, nhà máy còn thiết lập một hệ thống báo cáo, phân tích và đánh giá dựa trên các thông tin cập nhật từ phần mềm ERP và phần mềm quản lý bảo trì tài sản CMMS. – Khi áp dụng các hệ thống quản lý chất lượng trên, chúng tôi đã có những lợi ích như: các hoạt động trong hệ thống ổn định; chất lượng sản phẩm ổn định và được cải tiến thường xuyên nên chất lượng ngày càng tăng; nhân viên tại các phòng ban tương tác và phối hợp rất nhịp nhàng.
Các nhà máy đang xây dựng sẽ áp dụng hệ thống quản lý chất lượng như thế nào?
